Black Fig Vodka - Vodka Infused With Figs

 This delightful and inherently somewhat sweet aperitif tastes great directly from the freezer, but it also goes well with dark chocolate, Jamón serrano, or a little manchego, pecorino romano, or other hard, salty cheese at room temperature.
Usually infused fruit vodkas are only made with fresh fruit, but for black fig vodka, we added dried figs. While the main purpose of adding dried fruit to vodka infusions is to ensure that the vodka captures the scent of the ingredient, it also adds complexity, depth, and concentration of flavor that cannot be achieved using fresh fruit alone (especially in the case of fruits that have a mild and delicate flavor, like figs, blueberries, or apricots).
The fresh figs were so ripe that when they cracked, thick, transparent sap that was sweet and syrupy came out. To guarantee that the vodka gets to the dried figs and can extract their flavor, they must be sliced very thinly because they are rather dense.
